Tofu Salad

Serves: 4

Ingredients:

400g firm tofu, cut into 1cm pieces (e.g. Macro Woolworths)

2 tbsp. light soy sauce

2 tbsp. honey

2 tbsp. sesame seeds

Warm water

1 Mango, diced OR canned pineapple pieces in juice, drained

80g sundried tomato strips, drained

1 cucumber, sliced

1 red capsicum, sliced

80g reduced fat feta, crumbled

400g premade mixed salad

Method:

  1. Prepare all salad ingredients.

  2. Drain tofu and pat dry with a clean tea towel or paper towel. Cut into 1cm pieces.

  3. In a large bowl or container, add soy sauce, honey, sesame seeds and some warm water and mix. Add cut up tofu and mix well.

  4. Place tofu mixture in the fridge and let it marinate for at least 2-3 hours.

  5. Heat a non-stick frying pan over medium-high heat and add tofu. Cook for 8-10 minutes or until tofu is golden and slightly crispy.

  6. Prepare salad and add tofu.

  7. Enjoy with some cooked brown rice or roasted potatoes for additional carbohydrates.

Tip: If you don’t like tofu, you can use your preferred choice of protein e.g. chicken breast, prawns, lean beef etc.)
