Strawberry & Caramilk Muffins

Makes: 12

Ingredients:

1/2 cup wholemeal self-raising flour

1 cup almond flour

1/3 cup brown sugar

1/2 cup milk (i used soy milk)

1 egg

1/4 cup Extra Virgin Olive Oil

1 tsp. vanilla essence

1/2 punnet fresh strawberries

1/2 cup caramilk choc chips

Method:

  1. Preheat oven to 180 degrees celsius, fan forced.

  2. Add all ingredients to a bowl and mix well to combine.

  3. Line a 12-hole muffin tray with muffin cases or grease with olive oil.

  4. Add the mixture evenly into the muffin holes and top with a thin slice of strawberry.

  5. Bake for 25 minutes or until cooked.

  6. Once muffins have cooled, melt 1/4 cup caramilk choc chips and evenly drizzle over muffins. (optional)

  7. Enjoy!
