Protein Pancakes
Serves: 1
Ingredients:
1/2 cup rolled oats
1 banana, 1/2 in mixture and the other 1/2 for serving
2 tsp. baking powder
Pinch of sea salt
1/2 tsp. cinnamon
1 tbsp. almond meal or wholemeal plain flour
1 scoop protein powder (i used True Protein french vanilla protein powder)
2 eggs
1 tsp. extra virgin olive oil
Toppings:
Sugar free maple syrup or honey
Peanut butter or Greek yoghurt
1/3 cup fresh or frozen berries
1/2 banana
Method:
Add rolled oats, 1/2 banana, sea salt, cinnamon, almond meal, protein powder and eggs to a high speed blender and blend until well combined. Add baking powder and mix through. Let mixture sit for 5 minutes before cooking.
Heat a non-stick pan over low-medium heat and add 1 tsp. extra virgin olive oil.
Pour some of the mixture into the pan and cook for ~2 minutes on each side or until cooked through.
Repeat for the remaining mixture.
Once pancakes are cooked add your choice of toppings and enjoy!
