Maddieās GF Muesli
Serves: 6
Ingredients:
1/3 cup hazelnuts
1/3 cup pecans
1/3 cup almonds
1 cup rice puffs
1 cup rice flakes
1 tbsp. cinnamon
1 tbsp. nutmeg
1 tbsp. extra virgin olive oil
1/2 cup coconut flakes
1 tsp. vanilla essence
Method:
Pre-heat oven to 180 degrees celsius, fan forced. Prepare a baking tray with baking paper and add nuts and coconut flakes. Drizzle olive oil evenly over the nuts and coconut flakes and bake for 10-12 minutes or until fragrant.
In a large bowl add rice puffs, rice flakes, cinnamon, nutmeg, and vanilla essence and mix to combine.
Add the nut and coconut mixture to the large bowl and combine.
Enjoy with some low-fat greek yoghurt and seasonal fruit or add it to your morning porridge or overnight oats for some additional crunch and flavour.
Store in an air-tight container for up to 10 days.
