Banana, Maple and Walnut Porridge

Serves: 1

Ingredients:

1 banana

1/2 cup rolled oats

1 cup milk of choice (i use skim milk)

1/4 cup walnuts

1/2 tsp. cinnamon

1 tbsp. chia seeds

Sugar free maple syrup

Method:

  1. Heat a non-stick medium pot over medium-high heat.

  2. Add rolled oats, milk, cinnamon, 1/2 banana and 1/2 chia seeds to the pot and stir. Once porridge starts to bubble, reduce heat and simmer for ~5 minutes, continue to stir so porridge doesn’t stick to the pot.

  3. Once cooked to liking, place porridge in a bowl and top with 1/2 banana, walnuts and sugar free maple syrup.

  4. Add more milk when serving if required.

    Tip: If you don’t like banana, you can use any other fruit e.g. berries, apples, pears, kiwi fruit etc.
