Eggs & Avo at Home

Serves: 1

Ingredients:

2 eggs, cooked to liking (e.g. boiled, poached, scrambled, fried)

1-2 slices wholegrain bread, toasted

1/4 avocado, sliced or smashed

Handful of spinach

1-2 tbsp. reduced fat feta, crumbled

1/2 tomato, sliced OR 3-6 cherry tomatoes, halved

1 tbsp. dukkah, for serving

Pepper, for serving

Method:

  1. Cook eggs to liking.

  2. Toast bread.

  3. Evenly spread avocado on toast and top with spinach, tomato, eggs, feta and dukkah.
