Banana & Apple Loaf

Serves: 8-10

Ingredients:

3 ripe bananas, mashed

2 eggs, whisked

1 tsp. cinnamon

¼ cup coconut flour

1 cup wholemeal plain flour OR 1 ½ cups almond flour

1 tsp. baking powder

¼ cup sugar free maple syrup or honey

1 tbsp. extra virgin olive oil

1 apple, peeled and diced

Method:

1.     Preheat oven to 180 degrees celsius, fan forced.

2.     Place all ingredients except apple into a bowl and combine.

3.     Add apple and mix through mixture. Add mixture to a baking dish and place in the oven for 25-30 minutes or until cooked through.

4.     Enjoy with some Greek yoghurt or peanut butter.
